yes—it you pickle it, it will loose weight and volume in the pickling process—or depending they can plump back up—juices from the pickling vegetable or fruit can be pulled out by the brining solution, leeching into the pickling / brining solution—but should plumb back up—kind of like bringing chicken—in hopes of making it moist—so it kind of depends on your technique and freshness 🙂
